Plate 18: Bartolomeo Scappi (1500 - April 13, 1577) was a famous Italian Renaissance chef. As head chef for popes and cardinals he prepared banquets for the most powerful men on earth. He acquired fame in 1570 when his monumental cookbook Opera dell'arte del cucinare was published. It was the world’s first illustrated cookbook, a colossal tome that includes a thousand recipes of the Renaissance cuisine and describes cooking techniques and tools, giving the first known picture of a fork. Lavish woodcuts illustrate the perfect layout of a kitchen, the range of pots, pans, knives, and other utensils needed to run a high-quality kitchen. Between 1570 and 1646, the book went through eight print runs, and versions of his recipes were borrowed for other publications in England, France, Germany, and Spain.
